I saw a sandwich like this somewhere and I love pesto so I had to try it out. I used a soft baguette, pesto (I prefer to make my own), real mozzarella (the wet kind, not the American Kind) and fresh Roma tomatoes with a bit of salt and pepper. I sliced it all up and put it on the George Foreman grill, aka panini press and melted the cheese. It didn't even last long enough for me to take a picture of! YUM!
