- 2 cups natural peanut butter
- 1 cup sugar
- 1 cup brown sugar
- 2 tsp baking soda
- 2 eggs
- 1 tsp vanilla
- 1 banana, mashed
- 1/2 cup flour
- toffee pieces
- chocolate chunks or mini chips
Preheat over to 325. Combine peanut butter, sugar, brown sugar and baking soda (I recommend using a stand mixer because this batter gets stiff). Add eggs, banana and vanilla. Fold in flour, toffee pieces and chocolate (I used my food chopper to make the toffee and chocolate smaller). Roll dough into 1 1/4 inch balls and then flatten them on the cookie sheet or stoneware. Bake for about 10 minutes.
Makes about 40 cookies.
